Pretty sure the self checkout isn’t where most people steal, why not just walk out the door with whatever you want?

You don’t steal all of it, you just miss the barcode on a couple items for the camera, so it looks innocent if somebody stops you.
Or you weigh more expensive fresh fruits & veggies as cheaper ones.
